This version takes a different approach. We're building that same craveable balance from real ingredients, layering acidity, richness and subtle sweetness so it melts straight into a hot smash burger and actually holds up. No shortcuts, just a sauce that delivers real flavour.


The Lineup

  • 1/2 cup high-quality mayonnaise (your structural foundation)
  • 2 tbsp dill pickles, minced down to a micro-paste
  • 1 tbsp pickle brine (liquid gold)
  • 1 tbsp yellow mustard
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Pinch of chili powder or cayenne (don't play it safe)

The Architecture

It's easy to default to squirting ketchup and mayo together, giving it a mix, and calling it done — but that approach tends to fall flat. Ketchup brings a lot of sugar and not much depth.

Instead, we start with tomato paste. It's richer, more concentrated, and brings a deeper savoury note that blends smoothly into the mayonnaise. The result is a thicker, more balanced sauce that holds together and builds real flavour.

Next, your knife work matters. Take those dill pickles and mince them so aggressively they practically turn into a paste. You want that sharp, tangy flavour suspended through every millimeter of the sauce — not hiding in clumsy, uneven chunks.

The spices need that time to drink in the moisture and marry into the fat. If you eat it immediately, the flavours are totally disconnected. Have some restraint. Let the cold lock it all together.

1. Build your base
Add mayo, tomato paste and mustard to a bowl. Mix until completely smooth — no streaks.

6. Taste and adjust
Stir, then taste. Add more pickle brine for tang or more chili for heat if needed.

7. Use it properly
Spread generously on burgers or use as a dip. This isn’t a light drizzle situation.

8. Push it over the top (optional)
Add a few dashes of Freshly Diced hot sauce to cut the richness and bring it to life.
