Rooted in Indian cooking, paneer tikka masala is all about layering spice, heat, and richness in a way that builds with every step. Paneer — an Indian fresh cheese that holds its shape and absorbs flavour — is the perfect base for it. Here, it’s coated in a thick yogurt marinade and cooked until it turns soft, rich, and deeply spiced, pulling in every bit of that smoky heat.

The Foundation

Here is how we build the architecture of the dish. Paneer is a fantastic sponge, but it needs a proper vehicle to carry the spices. That is where the plain yogurt steps in. The lactic acid in the dairy acts as a chemical magnet, grabbing hold of the fat-soluble compounds in the Tandoori and Garam masalas, creating a thick, intensely spiced paste that clings to the cheese.

The Heat

Grab a heavy-bottomed pot and bring some neutral oil up to temperature. We use neutral oil because we want that massive spice payload to speak for itself without interference. Slide the marinated paneer right into the hot oil.

And hear me on this: use a rubber spatula to scrape every single trace of that marinade out of the bowl. Do not dare rinse it out with water. Water destroys the fat, and the fat is exactly what is carrying all your flavour. As the temperature climbs, the moisture will evaporate out of the yogurt, tightening the marinade into a deeply concentrated, slick gravy.


The Climax & The Steam

Once the paneer softens up, introduce the onion petals and bell peppers. Hit the pan with a squeeze of fresh lime juice. That sudden spike of acid is going to slice right through the heavy dairy and wake the entire room up. 1. Build your marinade
